The team at Welsh Sauce Kitchen, owned by www.PembrokeshireChilliFarm.com, have in the past few weeks launched their first ever Black Garlic Ketchup, made with fermented black garlic cloves for a sweet & balsamic unique umami flavour.
Black garlic is brownish-black and gets it colour from an East Asian aging process where it’s placed in a warm, moisture-controlled environment for a number of weeks. It’s this that gives the ketchup it’s black colour; a far cry from the usual red that people have come to expect with ketchup.
It takes 288 hours to ferment before it can be made into Black Garlic Ketchup, and both times it has been made and bottled in recent weeks – making a total of 250 bottles – the brand new sauce has sold out within 24 hours.
There is a waiting list for the next batch of Black Garlic Ketchup, currently being made and due to be released this week.
The sauce can be used in many different recipes and in many different ways, from marinating chicken wings and being smothered over ribs, right through to being drizzled over noodles and even mixed with mayonnaise for a sweet, yet sticky burger sauce.
